Prison food conjures up images of grey gruel. But the French Embassy’s chef, Gilles Quillot, is doing his bit to change that stereotype, by conducting a cooking masterclass at The Clink, the posh restaurant inside Brixton prison.
The chef was invited to cook for a captive audience ahead of the annual celebration of French gastronomy, Good France, where restaurants around the world – including The Clink – served up French Fare. The restaurant is run by a charity that aims to give inmates skills needed to start a new life. Quillot was so impressed with some of the apprentices he offered them a job on their release.
